Jam Biscuit Recipe!
Ingredients needed:
- 250 grams of plain flour
- 200 grams of butter (I used Flora)
- 100 grams of icing sugar
- a pinch of salt
- 2 egg yolks
- Strawberry or Raspberry Jam.
1)
First step: preheat your oven to 170C or Gas 3.
2) Sieve flour into a bowl.
3)Then add the butter diced up at room temperature.
4) Next add the icing sugar and the pinch of salt.
On the recipe I was using as a guide it told me that when using you fingertips and a rubbing motion it would turn into breadcrumbs. Mine didn't. Do not worry just add a little more flour to make it less sticky- unless you did it correctly.
5) Add 2 egg yolks to the mixture and mix.
6) Put the dough onto a surface with flour to stop it sticking. Roll the mixture out so that it is around 0.5cm thick and cut your shapes. You can use any cutters you have; for example hearts or stars but, I only had the basic circle.
Make sure there is enough to pair them. One of them need to have a hole in. Mine almost looked like little doughnuts.
Some of them weren't quite a circle... Use all the mixture you can I had quite a lot and managed to make around 10 biscuits.
7) Put them into the oven on a baking tray and they should be in there for around 10-15 minutes, until 'golden' brown.
8) After they have been left to cool, pair each of them together and place around a teaspoon of jam onto the bottom biscuit. Then place the biscuit with the hole on the top and you are done!
Almost like a sandwich.
